Isomalt is a kind of sugar that's melted and poured or molded into a variety of shapes and it sets solid, like hard candy.
It’s magical stuff and we can create otherwise impossible elements for cakes with it.
Gemstones, crystal drops and geode slices are just the tip of the isomalt iceberg.
Imagine a bucket full of ice, with a bottle of champagne. Look twice and you'll see that the ice and bottle are both made of isomalt. Need a wave for your surf cake? Isomalt can do that too.
